Easy way to make potatos and chops interesting
Ingredients (serves 2)
- 4 lamb chops
- 1 small tin of butter mushrooms
- 1/4 cup of diced capsicum
- 1/4 cup diced onion
- 1/2 teaspoon minced garlic
- 2 teaspoons sour cream
- 2 medium sized potatos
- to season salt and pepper
Method
- Put potato on the boil for aprox 20 min or until soft
- chop up onion and capsicum and garlic mix
- cook chops and put aside.
- Fry up mix and when soft add tin of mushrooms fry together for 5 min or so
- Get potato and scoop out a hole on top add sour cream and top with shallots put lid back on potato.
- Dish up chops and top with mix. I always make a salad to go with it
