You’ll never buy canned baked beans again after trying these breakfast beans!

Serves 4

Preparation time: 10 minutes

Cooking time: 15-20 minutes

Ingredients

2 tsp olive oil*

1 small onion, finely chopped

1 celery stick, chopped

400g can no added salt chopped tomatoes*

400g can borlotti beans, rinsed and drained

1 tbs reduced salt barbecue sauce

2 tsp Dijon mustard

1/2 cup water

1/2 430g loaf Turkish pide*

1 tbs chopped fresh parsley

Cracked black pepper, to season

Instructions

1. Heat oil in a medium saucepan, add onion and celery and sauté for about 2 minutes until onion has softened slightly.

2. Stir in tomatoes, beans, barbecue sauce, mustard and water and bring to the boil.

3. Reduce heat and simmer uncovered for 15-20 minutes until reduced and thickened, stirring occasionally.

4. Toast bread lightly, top with hot bean mixture then sprinkle with parsley and season with pepper, if desired.

  • I love baked beans, and I’d love to try this recipe with some bacon added, and maybe a little chilli. Even a little grated cheese added would be nice. And some spring onions. I guess the variations you could make to this would only be restricted by your imagination.
