With school back, I’m always on the hunt for lunchbox ideas that are filling, nourishing and actually get eaten.

This broccoli pesto pasta ticks all the boxes. It’s made using simple Black & Gold ingredients from IGA, comes together quickly and works just as well cold as it does warm.

Ingredients

  • 1 packet Black & Gold spiral pasta
  • 1 cup steamed broccoli
  • 1 cup basil leaves
  • 1/3 cup olive oil
  • 1/4 cup pine nuts
  • 3/4 cup Black & Gold cheese
  • 1 tbsp lemon juice
  • 1 garlic clove
  • Salt and pepper to taste
  • 1/4 cup Black & Gold Thickened cream
  • Cherry Tomatoes to top

Method

  1. Add all pesto ingredients to a high speed blender or food processor and pulse until combined.
  2. Pour the pesto into the large pot with the hot cooked pasta and add the cream in to thin.
  3. Stir well until incorporated.
  4. Add the cherry tomatoes when serving. Add extra salt and pepper to taste if required

  • Oh wow, I would never have thought that broccoli could be used or added into a pesto recipe.
A perfect way to blend or hide in a veggie that some people don’t like!
Will be giving this one a good as pesto pasta is usually a weekly recipe – sneaky veg to be added in for more flavour.

  • What a tasty looking recipe! Thank you for taking the time to share it! I am always on the lookout for new recipes and this one sounds right up my alley! I will have to convince the kids to try it with the broccoli, but the addition of the cream may entice them.

  • This looks lovely! So easy to make. I love anything with pesto. I’ve never felt confident making my own pesto but this recipe makes it sound so simple. This meal would make a great dinner side dish or eaten as its own for work or school lunches. A very healthy and delicious recipe. Nice one!

  • Broccoli and pesto is such a lovely combination and it is always nice to bring a lot of variation in your pasta recipies so the family members don’t get bored. Personally I like pasta to have a royal amount of veggies and I think that’s a bit scarce in this recipe. I also would add a protein source.

  • Adults and children do get excited about food that looks scrumptious to eat. Colourful food that is presented in Bento boxes makes eating vegetables, fruit and other foods achievable and good and also fun. It is a good idea to get feedback from everyone in the family about what they want in their Bento boxes.
