With school back, I’m always on the hunt for lunchbox ideas that are filling, nourishing and actually get eaten.
This broccoli pesto pasta ticks all the boxes. It’s made using simple Black & Gold ingredients from IGA, comes together quickly and works just as well cold as it does warm.
Ingredients
- 1 packet Black & Gold spiral pasta
- 1 cup steamed broccoli
- 1 cup basil leaves
- 1/3 cup olive oil
- 1/4 cup pine nuts
- 3/4 cup Black & Gold cheese
- 1 tbsp lemon juice
- 1 garlic clove
- Salt and pepper to taste
- 1/4 cup Black & Gold Thickened cream
- Cherry Tomatoes to top
Method
- Add all pesto ingredients to a high speed blender or food processor and pulse until combined.
- Pour the pesto into the large pot with the hot cooked pasta and add the cream in to thin.
- Stir well until incorporated.
- Add the cherry tomatoes when serving. Add extra salt and pepper to taste if required
