If you’re looking for healthier options when it comes to breakfast, brunch or even just snacks, these Buckwheat Pancakes with Banana are the bomb! A healthy version of one of everyone’s favourite foods.


Ingredients (makes 8 pancakes)

  • 3/4 cup Fermentanicals Organic Sprouted Buckwheat Flour
  • 3/4 cup Spelt Flour – white or wholemeal
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • 3/4 cup nut milk
  • 1 egg (if vegan substitute the egg with 1 tsp ground flax added to ¼ cup water, allow to stand for 10 minutes before adding to the recipe)
  • 1/4 cup pure maple syrup
  • 2 large mashed bananas

Method

  1. Combine buckwheat flour, spelt flour, baking powder and cinnamon in a large bowl. Add the mashed banana, maple syrup, nut milk and egg whisk till smoothie, stand for 5 minutes
  2. Heat a non-stick frying pan over medium heat, use a small amount of coconut oil to grease the pan if required. Add 1/3 cup of the mixture to the heated pan and cook for approximately 3 minutes or until golden each side
  3. Serve warm with your favourite toppings
