This is delicious and can be varied if you like more nuts/seeds and less fruit (or vice versa). It freezes well but I’ve never had a loaf last longer than a day.


Ingredients (serves 4)

  • 1 Cup Self Raising Flour
  • 1 Cup Wholmeal Self Raising Flour
  • 1 Cup Sugar
  • 1 Cup Coconut
  • 2 Cup Milk
  • 2 Cup Mixed seeds, nuts & fruit

Method

  1. Pre-heat your oven to 180 degrees Celsius.
  2. Grease 2 narrow bakers (loaf) pans with greaser of your choice.
  3. Combine all ingredients in a bowl, then equally separate and pour into the two loaf pans.
  4. Cook in the oven until golden brown (approximately 20-30 minutes) and a knife/stick is poked through and comes out clean.

  • Sounds interesting and I would love to give this a go. I would be concerned that it might be a little dry. Hopefully it would toast well and taste awesome smothered in melted butter. Either way it sounds easy to make so its worth the risk I guess. Hopefully yummy toasted
