Ingredients
- 3/4 cup plain yoghurt
- 1 tsp lemon
- 1 tsp tumeric powder
- 2 tsp garam masala
- 1/2 tsp cayenne pepper powder
- 1 tsp ground cumin
- 2 tsp ginger, freshly grated
- 2 cloves garlic, minced
- 500g chicken fillets cut into bite size pieces
- 2 tbsp butter
- 1 1/2 cup canned tomatoes
- 1 cup thickened cream
- 1 tbsp sugar
- 1 tsp salt
- Serve with basmati rice and garnish with coriander
Method
- Combine the marinade ingredients in a bowl then add the chicken and stir until the meat is covered with the marinade. Cover and refrigerate for 2-3 hours.
- Heat the butter over high heat in a large fry pan. Add the marinaded chicken to the pan and fry until cooked through - it should take only a couple of minutes (depending on the size of your chicken cubes).
- Add the tomato puree, cream, sugar and salt into the pan. Turn the heat down to low and simmer for 20 minutes. Add more salt to taste if required.
- Garnish with coriander and serve with steamed basmati rice.
