Ingredients (serves 12)

  • 250gm Butter
  • 1 cup sugar
  • 1.5 cup SR flour
  • 2 tsp vanilla essence
  • 3 eggs
  • 1/2 cup raisins
  • 3/4 cup milk

Method

  1. In a large bowl, cream butter, vanilla and sugar until soft and fluffy. Add in eggs and continue whisking on low speed.
  2. Add flour and milk and combine until very well and no visible flour. Add in raisins last.
  3. Bake for 1.5 hour on 160 C in a baking loaf pan.

  • I wonder if it would be o.k. to use sultanas or mixed fruit, or even fruit medley instead of just plain raisins? Would be delicious with some lemon icing on it.

  • This would be lovely when it’s still warm from the oven, with a crisp shell, and lots of lovely butter on it. Not healthy, but really delicious.
