Ingredients (serves 12)
- 250gm Butter
- 1 cup sugar
- 1.5 cup SR flour
- 2 tsp vanilla essence
- 3 eggs
- 1/2 cup raisins
- 3/4 cup milk
Method
- In a large bowl, cream butter, vanilla and sugar until soft and fluffy. Add in eggs and continue whisking on low speed.
- Add flour and milk and combine until very well and no visible flour. Add in raisins last.
- Bake for 1.5 hour on 160 C in a baking loaf pan.
