Ingredients (makes 30 )
- 250gm Butter
- 1 cup White sugar
- 1.5 t Vanilla essence
- 1/4 t Salt
- 1 large egg yolk
- 2 cups SR flour
- 30 Whole almonds
Method
- Beat the butter, sugar, salt and vanilla together until smooth and creamy. Mix in the egg yolk until well incorporated.
- Add the flour and mix just until combined.
- Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for 1 hour.
- Preheat the oven to 325°F. Line baking sheets with parchment. Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart. Put an almond on each cookie and bake for about 12 minutes.
