Ingredients (serves 6)

  • 500gm pasta
  • 30gm butter
  • 100gm bacon
  • 2 garlic clove
  • 4 eggs
  • 100gm parmesan cheese
  • 250gm mushroom
  • salt and pepper
  • steamed spinach

Method

  1. Bring a large saucepan of salted water to the boil over high heat. Add pasta and cook, following packet directions, until tender.
  2. Meanwhile, melt butter in a large, non-stick frying pan over medium heat. Add bacon, mushroom and garlic. Cook, stirring, for 3 to 4 minutes or until bacon is crisp.
  3. Drain pasta and return to saucepan. Add egg, bacon mixture, three quarters of the parmesan and salt and pepper. Toss over low heat until well combined. Spoon pasta into bowls. Top with remaining parmesan, steamed spinach and serve.

  • I would love to try this recipe, but being areal fan of onion, I’d definitely add an onion or two. A dash of tabasco or chilli would give it a nice bite too. I guess if I really wanted to be a bit naughty, a splash of cream would be good too.
