The Carrot Cake Overnight Oats recipe is so quick & easy! Tastes “naughty” but its completely “nice” … full of goodness and loads of energy to get you through the morning ! Also makes a great midday snack.
Ingredients (serves 6)
- 2 cups Quick Rolled Oats
- 1 cup grated carrot
- 1 cup Yoghurt (plain or Vanilla is best for this recipe)
- 1 1/2 cups Soy or Regualar Milk
- 1/4 cup chopped pecans
- 1/4 cup desicated coconut
- 1/4 cup pepitas
- 1/2 tsp vanilla paste
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp clove
- 2 tbsp honey (i like to use makuka or raw honey)
- 3 tbsp chia seed
Method
- combine all ingredients ...place in covered container & let sit overnight in the fridge
- serve with addition nuts & seeds sprinkled on top
