Need a way to use up all of those yummy Easter eggs? This recipe hits definitely hits a sweet spot!


Ingredients (serves 6)

  • 3 tablespoons Butter
  • 12 Marie biscuits
  • 375g Cream cheese
  • 300ml Thickened cream
  • 1 teaspoon Vanilla extract
  • 1 cup Sugar
  • 3 Large hollow chocolate eggs
  • Speckled eggs
  • Extra milk chocolate

Method

  1. Put biscuits in a food processor and process until fine crumbs. Melt butter in microwave and mix in with biscuits until combined.
  2. Grab a hot knife and cut eggs in half (you can also use small jars or cups). Spoon in crumb mix into each egg half and press down gently - pop in fridge to harden.
  3. Put cream and cream cheese in a large bowl and mix with a whisk until combined.
  4. Add sugar and vanilla to cream cheese mix and mix until smooth and combined. Spoon into eggs over crumb.
  5. Grab your extra chocolate and grate over the cream cheese mix. Pop in some speckled eggs as a decoration for the tops.
  6. Melt remaining chocolate and drizzle over the tops of the eggs.
  7. Pop in the fridge to set.

  • What a great idea but I’d have to see if I could buy any Easter Eggs first. This would also be a great Easter gift to give adults instead of just the plain Easter Eggs. Will try to remember this for next Easter.
