Need a way to use up all of those yummy Easter eggs? This recipe hits definitely hits a sweet spot!
Ingredients (serves 6)
- 3 tablespoons Butter
- 12 Marie biscuits
- 375g Cream cheese
- 300ml Thickened cream
- 1 teaspoon Vanilla extract
- 1 cup Sugar
- 3 Large hollow chocolate eggs
- Speckled eggs
- Extra milk chocolate
Method
- Put biscuits in a food processor and process until fine crumbs. Melt butter in microwave and mix in with biscuits until combined.
- Grab a hot knife and cut eggs in half (you can also use small jars or cups). Spoon in crumb mix into each egg half and press down gently - pop in fridge to harden.
- Put cream and cream cheese in a large bowl and mix with a whisk until combined.
- Add sugar and vanilla to cream cheese mix and mix until smooth and combined. Spoon into eggs over crumb.
- Grab your extra chocolate and grate over the cream cheese mix. Pop in some speckled eggs as a decoration for the tops.
- Melt remaining chocolate and drizzle over the tops of the eggs.
- Pop in the fridge to set.
