Ingredients (makes 20 )
- 10 Cherry tomatoes
- 1/2 Mango diced finely
- 1/2 Capsicum diced finely
- 2 small stems Coriander
- Lemon juice to taste
Method
- Cut the tomatoes in halves and scoop out the flesh to use as mini bowls. Do not discard the flesh.
- In a bowl, put the tomato flesh, mangoes and capsicum. Mix well. Add lemon juice and coriander to taste.
- Scoop about 2 teaspoons of the mixture into the cherry tomato cups. Serve :)
