Ingredients (serves 25)

  • 2 cups (180g) rolled oats
  • 1 cup (150g) plain (all purpose) flour
  • 2/3 cup (150g) caster sugar
  • 3/4 cup (60g) desiccated coconut
  • 1/3 cup (115g) golden syrup
  • 110g unsalted butter
  • 1.5 teaspoons bicarbonate of soda
  • 2 tablespoons hot water

Method

  1. Preheat your oven to 160°C (325°F). In a large mixing bowl, combine rolled oats, flour, sugar, and desiccated coconut—mixing these ingredients pays tribute to our Anzac heritage!
  2. In a saucepan over low heat, combine golden syrup and butter, stirring until melted and smooth.
  3. Combine the bicarbonate of soda with hot water and add it to the melted butter mixture. Pour this into the dry ingredients and mix well.
  4. Using an ice cream scoop, measure out even portions of the mixture. For that perfect biscuit shape, roll each scoop in your hands to form smooth balls.
  5. Place the shaped balls onto baking trays lined with non-stick paper, gently flattening them into 7cm rounds while leaving space for them to spread—just like the spirit of camaraderie!
  6. Bake in the preheated oven for 8-10 minutes, until they are beautifully deep golden.
  7. Allow the biscuits to cool on the trays for 5 minutes before transferring them to wire racks too cool completely.

  • Great recipe, loved by my whole family. They turn out perfect every time I love to eat them with a cup of tea. My kids love to have them in their school lunchboxes. Nobody ever gets fed up of eating these yummy biscuits. A recipe I will make for years to come.

  • Anzac biscuits are such a big part of being Australian. I love the history behind the Anzac biscuit. I tend to only make Anzac biscuits a few times a year and especially, always just before Anzac Day itself. There are so many recipes out there that it’s hard to choose just one which is a keeper. This recipe sounds good. I love how it makes 25! I’ll be referring to this recipe next time.

  • Absolutely delicious, so tasty. I love how the kids could easily help in the kitchen with this one. Growing up i remember the good old question of do you prefer soft and chew or crunchy Anzac biscuits, my preference has always been soft and chewy. Will defiantly be making these again.

  • The chewy kind of Anzac biscuits are my favourite for sure!! It’s the best way to enjoy these cookies as you get the both world of both crispy on the outside and soft and chewy middle bits. I didnt realise how simple the recipe was and will definitely be trying these at home!

  • You just can’t have an Anzac cookie crunchy ! This is definitely a NO-NO in our family. Chewy cookies are a staple in our house around Anzac Day, and they usually stay a fixture for several months after the fact. This recipe uses ingredients usually found in the pantry and is nice and easy to follow. Thanks for sharing this delicious recipe.

  • Everyone should have a go to Anzac biscuit recipe and this one looks like it would work well (it’s a bit different from mine). I specially love an Anzac that’s a bit crunchy around the edges but soft and chewy in the middle. It’s not easy to achieve that, though. Thanks!

  • I tried this recipe the whole family loved them .They are soft and chewy that’s a nice change from the hard ones . I got the kids involved with making them we had a great afternoon mixing and baking They are perfect with a cup of tea or coffee .Thanks so much

  • We have been having such a good time making and baking Anzac biscuits and also finding many ways to use them in other recipes. We have been using them for bases in slice recipes and also in ice cream. Anzac biscuit ice cream is a favourite ice cream to make and to eat.

  • Yummy looking Anzac biscuits!!!!! Every time I’ve made Anzac biscuits they turned out so hard! Even the store bought ones are hard. I got to try this receipe and make them chewy! They would go down well with a hot black tea or cold milk! For breakfast and afternoon tea!

  • I am a massive fan of baking on the weekends and particularly making and baking biscuits for the week. We do love the taste of Anzac biscuits and we love both chewy and crunchy Anzac biscuits. Anzac biscuits are so good because the ingredients to make them are staple items in our pantry.
