I sometimes add sliced mushrooms as well which adds another vegetable and more flavour !
Ingredients (serves 4)
- 1 Med BBQ chicken
- 1 440g tin cream of chicken (or cream of mushroom soup)
- 1 300ml sour cream
- 1 teaspoon curry powder
- 4 spring onions chopped
- 1/2 - 3/4 teaspoon (approx) salt
- 1/2-3/4 teaspoons cracked black pepper
- 1/4 cup grated tasty cheese
- 1/2 teaspoon (approx) paprika
Method
- Break chicken meat into chunks
- Drop Broccoli into boiling water. cook 1 minute
- Drain and refresh under cold water
- Combine soup,sour cream, curry powder,spring onions and salt and pepper in a bowl . Mix to combine
- Place broccoli in the base of a greased oven dish. Top with chicken
- Pour over soup mixture, sprinkle with cheese and paprika
- Bake in moderate (180 ) 30- 40 minutes or until slightly golden on top .
- Serve over rice

I started cooking this for my family years ago... it was an instant hit with them all (winner !) and have been making it ever since whenever i need a quick easy meal that always turns out !
