This is a quick ,easy and hearty meal. It's very forgiving if you change the ingredients a little …
I sometimes add sliced mushrooms as well which adds another vegetable and more flavour !


Ingredients (serves 4)

  • 1 Med BBQ chicken
  • 1 440g tin cream of chicken (or cream of mushroom soup)
  • 1 300ml sour cream
  • 1 teaspoon curry powder
  • 4 spring onions chopped
  • 1/2 - 3/4 teaspoon (approx) salt
  • 1/2-3/4 teaspoons cracked black pepper
  • 1/4 cup grated tasty cheese
  • 1/2 teaspoon (approx) paprika

Method

  1. Break chicken meat into chunks
  2. Drop Broccoli into boiling water. cook 1 minute
  3. Drain and refresh under cold water
  4. Combine soup,sour cream, curry powder,spring onions and salt and pepper in a bowl . Mix to combine
  5. Place broccoli in the base of a greased oven dish. Top with chicken
  6. Pour over soup mixture, sprinkle with cheese and paprika
  7. Bake in moderate (180 ) 30- 40 minutes or until slightly golden on top .
  8. Serve over rice

Notes

I started cooking this for my family years ago... it was an instant hit with them all (winner !) and have been making it ever since whenever i need a quick easy meal that always turns out !

  • i like this dish! this is a unique recipe idea. chicken recipes are always welcome and my kids actually like broccoli/little trees :) thanks for posting your idea. i can’t wait to try it and i reckon that it will be a winner in my house as well (somehow broccoli wasn’t listed as an ingredient but it is in your instructions lol)

  • Sorry ! Seniors moment .. of course there is broccoli in this recipe ????
    I either use 1-1 1/2 bunches of broccolini or 2 med heads of broccoli
    It really depends how much you like it ! ????

  • The broccoli are missing from the list of ingredients. :-)
    It looks good!! I would probably make it with cauliflowers, because I am not a big fan of broccoli. :-)
