Ingredients (serves 1)

  • 1 chicken thigh fillet.
  • 3 slices avocado.
  • 1 thin piece ham
  • 1 good size slice of brie.
  • pinch cracked pepper
  • filo pastry
  • pinch mixed herbs

Method

  1. Lay thigh on chopping board and tenderise with meat hammer..you will be left with a flat piece of meat.
  2. Brush chicken with butter. Lay the ham on chicken. Then avo then brie. Sprinkle with cracked pepper.
  3. Roll up chicken with bits tucked in. Wrap in filo pastry. Brush with butter. Sprinkle with mixed herbs.
  4. Cook on baking paper On 180 till golden brown.

  • Yum, I love how easy this is to make. I’m never buying pre-made chicken parcels again, I’m going to make my own. I guess I’d only be limited by my imagination as to what ingredients I’d use. Could do a different one for each family member.
