Tagine is a middle eastern the stew, which generally incorporates savoury and sweet ingredients.
This meal is not spicy at all (a little chilli can be added for a kick) and is a family friendly meal that is delicious served with cous cous.
Ingredients (serves 8)
- 1.5kg Chicken Thigh Fillets (skin off) cut into 3cm pieces
- 3 Onions brown sliced
- 5 Garlic cloves minced
- 1 cup Chicken stock
- 1 can Chickpeas
- 2 cups Dates whole pitted
- 1 1/2 cup Water boiling
- Spice Mix:
- 1 tbl Tumeric
- 1 1/2 tbl Sweet paprika
- 2 tbl Coriander ground
- 2 tbl Cumin ground
- Garnish (optional):
- Chopped almonds/cashews
- Coriander
Method
- Place dates in a bowl and pour in boiling water.
- On medium heat drizzle olive oil and add in onions in a pot. Once onions start to soften and brown stir in garlic until fragrant and then add chicken.
- After cooking chicken for a couple minutes stir in the spice mix, chicken stock and dates along with the water it was in. Season with salt and pepper, turn to a low heat and cover with lid for 30mins.

Don't let the spices deter you from this dish. This is a family friendly meal and the sweetness of this dish
