Yummy lunch on the weekend to please the man!


Ingredients (serves 3)

  • 2 pieces Chicken breast
  • 1 cup Plain flour
  • 1 egg
  • 2 cups Dry bread crumbs
  • 1tbsp Water
  • 2 cups Oil for frying
  • 500gm Red cabbage (shreded)
  • 1 large carrot
  • 1 small Brown onion
  • 2 tsp Horseradish cream
  • 1/4 cup Whole egg mayo
  • 1 tbsp each Dijon mustard and lemon juice
  • Salt and pepper

Method

  1. On a chopping board, flatten the breast slices with a meat mallet.
  2. Lay out three wide bowls. Put the flour in one and season it with salt and pepper. In another, beat the egg with the water. Place the breadcrumbs in the other.
  3. Using one hand, lightly coat each piece of chicken in the flour, shaking off the excess. Dip into the egg then coat with breadcrumbs.
  4. Heat a deep frying pan with the oil and fry the schnitzels until golden brown on each side.
  5. For coleslaw, place cabbage, carrot and onion in a large bowl. Toss to combine.
  6. Combine horseradish cream, mayonnaise, lemon juice and mustard in a bowl. Add to cabbage mixture. Season with salt and pepper. Toss gently to combine. Serve with the chicken Schnitzel .
