A really easy and very tasty soup!
Ingredients (serves 4)
- 4 Carrots, diced
- 4 Celery sticks, diced
- 1 litre Chicken stock
- 500 mls Water
- 1 cup Self raising flour
- 1 Tbsp Baking flour
- 1 cup Cooked brown rice (or any rice)
- Extra water
Method
- Bring the stock and water to the boil. Add the carrot and celery. You could also add some curry powder, herbs or pepper to flavour the broth.
- In a big mixing bowl stir the flour, baking powder and rice to form a dough. You may need to add some water to make a stiff dough.
- Turn off the soup broth. Drop spoonfuls of the rice dumpling dough into the soup. Cover and let steam for 10 minutes until the dumplings have roughly doubled in size.
- Serve! Easy and yummy.
