so super easy….! Can't believe I don't make this more often. Add less chilli if the kids want to eat it too.


Ingredients (serves 3)

  • 500g Mince
  • 2 tablespoons Oil
  • 1 red capsicum
  • 1 small onion
  • 1 400g tinned tomatoes
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried corriander
  • 1/2 teaspoon chilli flakes
  • 1/2 smashed avocado
  • 1 Lime
  • 1/2 cup Sour Cream
  • 1 packet Missoni GF corn chips
  • 1/4 cup tasty cheese

Method

  1. Use half oil and heat in a frying pan, adding onion and capsicum until onion has browned. Add tinned tomatoes and all the spices and cook on a medium heat for about 2-3 minutes until all combined and aromatic. Turn off heat and set aside
  2. Use remaining oil and heat mince. Cook for about 5 minutes or until all meat has just turned brown. Add the onion/capsicum mixture and stir through, cooking for another few minutes until meat is completely cooked.
  3. In a small bowl, mash half avocado and squeeze the juice of a lime in the mix
  4. It's time to plate up.....on a platter, put the smashed avocado and sour cream to allow for dipping. Add the bag of corn chips and spread out onto the platter as per the picture. Heap the chilli con carne mix on top of the corn chips and sprinkle the cheese.
  5. Dig in!!
