Beef and cheese chimichangas


Ingredients (makes 8 )

  • 1 pkt tortillas
  • 500g beef mince
  • 1 pkt burrito seasoning
  • 3 spring onions
  • 1/4 cup slivered almonds
  • 1/4 cup water
  • 1 cup shredded cheese
  • 1 can olive oil spray

Method

  1. Brown mince in a fry pan. Stir in seasoning, water, spring onions and almonds. Simmer a few minutes until mixed well and thickened. Leave to cool, fold in cheese.
  2. Slightly warm tortillas in microwave for 10 seconds (individually). place 1/3 cup of mince mixture in the centre of tortilla. fold all ends in to make a parcel. Place on lined baking tray with loose edges down. Lightly spray with oil. Repeat until mixture is gone.
  3. Bake in 180 degree oven for 20 mins or until golden and crispy.
  4. Serve with fresh crisp lettuce and salsa.

This is one of my hubby's favourites, second to my chicken chimichangas:)

  • These would be a great snack to make and eat while watching the footy on a cold & wet Winter’s day. But I’d have to make a lot of them, because I know our family, and these wouldn’t last long.
