A tasty cakey cookie which is great for afternoon tea.
Ingredients (makes 24 biscuits)
- 2 ripe bananas
- 125 grams butter
- 3/4 cup brown sugar
- 2 cups self raising flour
- 1 cup rice bubbles
- 2 tablespoons cocoa
Method
- Preheat oven to 200 degrees and line baking trays.
- Cream the butter and sugar together. Mash the banana and then stir into the butter and sugar mix.
- Add the flour, cocoa and rice bubbles and stir together.
- Bake for 15-20 minutes.
Notes
This is more of a cross between a cake and a cookie as they are quite soft but hold shape like a cookie.
