I make and freeze these biscuits for a sweet, occasional, lunch box treat.


Ingredients (makes 60 -70)

  • 125g Butter, softened
  • 1/2 cup Brown sugar
  • 1/2 cup Sugar
  • 1 Egg, lightly beaten
  • 1 3/4 cup Self-raising flour
  • 150g Chocolate chips

Method

  1. Prep heat oven to 180 degrees. Line a tray with baking paper. Cream the butter and sugars together. Add the egg, a little at a time, beating well.
  2. Sift flour and mix in. Fold in chocolate chips.
  3. Place teaspoons of mixture onto tray. Allow room for slight spreading. Bake for 10-12 minutes.

Notes

Sometimes I reduce the amount of chocolate chips by adding in dried, chopped apricot.
