I make and freeze these biscuits for a sweet, occasional, lunch box treat.
Ingredients (makes 60 -70)
- 125g Butter, softened
- 1/2 cup Brown sugar
- 1/2 cup Sugar
- 1 Egg, lightly beaten
- 1 3/4 cup Self-raising flour
- 150g Chocolate chips
Method
- Prep heat oven to 180 degrees. Line a tray with baking paper. Cream the butter and sugars together. Add the egg, a little at a time, beating well.
- Sift flour and mix in. Fold in chocolate chips.
- Place teaspoons of mixture onto tray. Allow room for slight spreading. Bake for 10-12 minutes.
Notes
Sometimes I reduce the amount of chocolate chips by adding in dried, chopped apricot.
