Not everything has to be super healthy! These chocolate chunk cookies are beautiful to look at and EAT!


Ingredients (makes 24 )

  • 1 cup Canola oil
  • 1 cup Brown sugar
  • 1/2 cup White Sugar
  • 2 tsp Vanilla essence
  • 1 tsp Baking soda
  • 2 eggs 2 Tbsp cornflour
  • 2 1/2 cups Plain flour
  • 1 1/2 cups Roughly chopped cooking chocolate

Method

  1. Preheat oven to 180c and line 2-3 trays with baking paper, set aside. Using an electric mixer, combine oil and sugars well. Add eggs and vanilla and continue to beat for 4 mins.
  2. In a large mixing bowl put in remaining dry ingredients. Slowly add wet mix, stirring with a spoon. At this stage I turn mix onto kitchen bench and press out with fingers roughly till between and cut cookies with a 6 cm wide, round cookie cutter and place on lined tray approx 3 cm apart.
  3. Bake for 15 minutes on top shelf or until top is cracked.

Notes

This cookie dough can be frozen and also tastes delicious in ice-cream! I've also made these with walnuts (1/4 cup) and dates (1 cup) also white choc chunk (1 cup) and walnuts (1/2 cup).

  • Can you use olive oil it might be healthier?


    • Yes you can, they may brown a little quicker as olive oil heats faster. Also this recipe makes alot more cookies than the average recipe. I’ve been wanting to try coconut oil aswell. Let me know how you go with it if you do try with olive oil.
