Not everything has to be super healthy! These chocolate chunk cookies are beautiful to look at and EAT!
Ingredients (makes 24 )
- 1 cup Canola oil
- 1 cup Brown sugar
- 1/2 cup White Sugar
- 2 tsp Vanilla essence
- 1 tsp Baking soda
- 2 eggs 2 Tbsp cornflour
- 2 1/2 cups Plain flour
- 1 1/2 cups Roughly chopped cooking chocolate
Method
- Preheat oven to 180c and line 2-3 trays with baking paper, set aside. Using an electric mixer, combine oil and sugars well. Add eggs and vanilla and continue to beat for 4 mins.
- In a large mixing bowl put in remaining dry ingredients. Slowly add wet mix, stirring with a spoon. At this stage I turn mix onto kitchen bench and press out with fingers roughly till between and cut cookies with a 6 cm wide, round cookie cutter and place on lined tray approx 3 cm apart.
- Bake for 15 minutes on top shelf or until top is cracked.
Notes
This cookie dough can be frozen and also tastes delicious in ice-cream! I've also made these with walnuts (1/4 cup) and dates (1 cup) also white choc chunk (1 cup) and walnuts (1/2 cup).
