A sweet treat that everyone will enjoy
Ingredients (makes 16 Bars)
- 125g Butter
- 1/2 Cup Brown Sugar
- 1 Cup Coconut
- 1/2 Cup Plain Flour
- 1/3 Cup Self-raising Flour
- 1 Tbsp Cocoa
- 1 Egg
- 1 Cup Icing Sugar
- 1 Tbsp Cocoa
- 1 Tsp Soft Butter
- 1 Tbsp Milk (approximate measurement)
Method
- Melt butter over low heat, stir in sugar, coconut, sifted flours and cocoa, then lightly beaten egg. Spread mixture evenly over base of well greased lamington tin (28cm x 18cm)
- Bake in a preheated 180•C oven for 20 minutes, or until just firm to touch.
- Meanwhile, sift icing sugar and cocoa into bowl, stir in butter and enough milk to give a thick paste.
- Once the base is ready, spread with icing immediately, stand for 10 minutes, then sprinkle with a little extra coconut. Cut into bars and cool in tin.
