This caramelised onion tart is one of those recipes that feels fancy but is actually dead simple.

The best part is how well this recipe freezes. You can assemble a few tarts ahead of time, pop them in the freezer uncooked and then bake straight from frozen when you need something quick. A little extra fetta and fresh thyme on top at the end brightens everything up. It’s easy, affordable and works beautifully as a festive nibble or a simple dinner any time of year.

We’re proudly working with IGA to bring you this recipe.

Ingredients

  • puff pastry
  • salted butter
  • 1 jar onion relish
  • 3 brown onions
  • fresh thyme (oregano would be nice too)
  • crumbled fetta cheese

Method

  1. Take the puff pastry out of the freezer and separate 3 sheets. Set aside to thaw slightly.
  2. Finely slice the 3 brown onions, then fry these lightly in a little olive oil with a pinch of salt.
  3. Add the jar of Baxters Caramelised Onion Relish, a 1/4 cup water and allow to simmer until most of the liquid has dispersed.
  4. While the onion relish is simmering, line a baking tray then lay out the puff pastry sheets using a fork to seal them together.
  5. Spread the onion relish all over the pastry
  6. Make a few Christmas stars with the left over pastry (I used a small cookie cutter)
  7. Brush the exposed pastry with a little melted butter
  8. Sprinkle with half the fetta cheese
  9. Bake at 180 degrees celcius for about 20 minutes (or until golden brown)
  10. Top with a little more fetta, fresh herbs then slice up and serve. This recipe is of course perfect any time of the year. It’s just so easy and tasty I love to have it on hand this time of year.

  • Thanks for sharing this recipe! It sounds so delish! I love caramelised onion and cooking this in the sheet pan is genius! It provides such a great ratio of pastry to topping and a large portion perfect for holiday entertaining or meal prep! Going to give this a go for sure! Maybe add a few toasted pine nuts for some extra crunch too

  • Thanks for sharing your recipe. I’m used to fry the onions with a bit of maple syrup and basilicum vinegar, dried thyme, pepper and salt and goats cheese. So no onion relish. I like to add some nuts too 😉 It’s also nice to add eggs and creme fraiche, but with a larger amount of onions (at least 5)

  • One of my favourite activities to engage in at Christmas time is going to the local markets and searching for different cheese to enjoy and to eat, Fetta is a cheese that is so good to eat with salad and there are so many good fetta cheese types to buy.

  • A great recipe, so easy and affordable. This would make a lovely entree or side dish. I have never thought of using puff pastry in this way, as a tart. I could imagine the sweetness of the onion relish, so nice! And the salty cheese to cut through the sweetness! Yum. Bookmarked!
