This is a nice rich and creamy dish, great for winter
Ingredients (serves 2)
- 2tbs Butter
- 2 Diced chicken breasts
- 1 Bunch of asparagus
- 1 Leek
- 1 Large brown onion
- 1 Salt and pepper to taste
- 2 Cups thickened cream
- 1 cup Greek Yogurt
- 1 tsp cumin
- 1 tsp Coriander
Method
- In a heavy based saucepan fry diced onion and the diced chicken, add in the leek, asparagus and spices and fry until cooked
- Add in the cream and yogurt, and season with salt and pepper
- Transfer mix to a blender or food processor and blend until smooth.
- Return to the saucepan and heat, serve with a dollop of Greek yogurt
Notes
Serve with some tummy crisp sourdough bread
