I love serve this cookies with cuppa and snack for my little boy.


Ingredients (makes 140 cookies)

  • 190 gr Butter
  • 100 gr Icing sugar
  • 50 gr Egg white
  • 220 gr Plain flour
  • 50 gr Ground almond
  • 3 Egg yolks for egg wash
  • Almond flakes for decoration

Method

  1. Cream butter and icing sugar on low speed until light and fluffy. Add in egg white, flour and ground almond, mix well.
  2. Spread the dough into the tray. Cover a plastic sheet on top and roll evenly with a rolling pin. Remove the plastic sheet. Bale in preheated oven at 170 C for 5 mins until half cooked.
  3. Take out from oven and slice into rectangles. Brush with egg yolk and place two pieces of almond flake on each cookies repeat until finished. Continued to bake for 15 mins or until golden brown. Remove from oven and cool on a wire rack and store in air tight container.

  • Really sweet from the look of the ingredients, I’m thinking if I can add oats or muesli it would be healthier.
