Ingredients (serves 5)

  • 500gm chicken (I used breast but thigh should work just fine)
  • 1-2 cups plain flour
  • 4 cups cornflakes, lightly crushed
  • 2-3 eggs, lightly beaten

Method

  1. Preheat the oven to 180C, 160C if fan forced
  2. Cut up the chicken in to pieces approximately 3-5cm long and 2cm thick
  3. Place eggs, flour and Cornflakes in separate bowls.
  4. Cover chicken pieces in flour, then egg and then roll in Cornflakes. You may need to press them on slightly.
  5. Place on lined greased tray.
  6. Bake in over for 30minutes until they darken in colour slightly. Adjust time depending on your oven
  7. Serve with your favourite salad or vegetables and dipping sauce

  • My fave crumbs for chicken at the moment are panko. I like them because they seem to be bigger, crunchier and provide more texture. I think cornflakes could definitely do the same. Thanks for the idea.

  • well crushed cornflakes can be used instead of breadcrumbs for many recipes instead of bread. You used to be able to buy them as crushed but I haven’t seen them for a long time. Maybe they are only supplied to restruants, caterers etc. now. This recipe could easily be converted to gluten free by changing the flour and gluten free cornflakes which are now available in the supermarkets.
