A delicious healthier version of curried sausages.
Ingredients (serves 6)
- 900g Sausages
- 60g Butter
- 1/2 Onion, diced
- 2 Cooking Apples, diced
- 1 Zucchini, grated
- 2 Carrots, grated
- 2.5 Tsp Curry Powder
- Pinch Mixed Herbs
- Handful Raisins
- 500 ml Chicken Stock (Salt Reduced)
- 1/2 cup Water
- 1 Tbsp Plain flour
- 1/4 cup Extra Water
Method
- Cover sausages with water in a saucepan. Add a dash of vinegar. Cover and bring to the boil. Simmer gently for 10 minutes and drain.
- Melt butter in saucepan. Sauté onion, zucchini, carrot and apple for 5 minutes. Add curry powder, mixed herbs and raisins. Stir over heat for 3 minutes. Add water and chicken stock, bring to the boil.
- Meanwhile, peel and cut sausages. Put sausages into curry and simmer for 10 minutes. Blend flour and extra water together and add to curry, stirring until it boils and thickens.
Notes
*I serve with 1.5 cups (uncooked measurement) of rice. *Cooking time can be reduced if you use seperate saucepans for boiling the sausages and preparing the curry.
