Delicious bikkie recipe everyone will love! Can easily be made gluten free by substituting for gluten free ingredients


Ingredients (serves 4)

  • 125g butter
  • 1/4 cup icing sugar
  • 1/2 teaspoon vanilla essence
  • 1 cup plain flour
  • 1/2 teaspoon baking powder
  • 25g butter softened
  • 1/2 teaspoon orange rind finely grated
  • 1/2 teaspoon vanilla essence
  • 1/3 cup icing sugar
  • 2 teaspoons custard powder

Method

  1. Beat the butter, icing sugar and vanilla in a bowl with electric mixer until light and fluffy.
  2. Sift together flour, custard powder and baking powder and gradually stir into the creamed butter mixture, mixing well. Roll even teaspoons of the mixture into balls and place on lightly greased oven trays.
  3. Flatten balls slightly with fingertips then use a fork to mark a pattern on top.
  4. Bake at 180 degrees for 10 mins or until lightly browned around the edges.
  5. Stand biscuits on trays for 5 mins then transfer to wire rack to cool. Sandwich together with a little custard cream.
  6. For the custard cream, beat butter, rind and vanilla in a bowl with wooden spoon until creamy.
  7. Gradually beat in the sifted icing sugar and custard powder, and continue beating until mixture is light and fluffy.

  • These sound super tasty. You could add lemon rind instead for a different taste

    Interesting to see orange rind in the recipe but I’m sure it will be delish as citrus flavours in desserts always taste so good.

  • I give my children honey, multivitamins and allergic rhinitis (which dries up the nasal drip responsible for the cough), and if coughing begins they get a 12 hour cough medicine. My 4 year old is prone to bronchiole pneumonia around this time of year, so best to dose them up than need to go to emergency!
