Ingredients (serves 4)
- 1 tbs oil
- 1 medium brown onion
- 500g pork mince
- 1 packet soft and hard taco kit
- 2 x 125g cans corn kernels drained
- 10 mini tortillas, heated
- baby cos lettuce leaves
- chopped grape or cherry tomatoes
- sour cream
- lime wedges
- shredded cheese
Method
- Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring occasionally, for 3 minutes until softening. Add pork. Cook, breaking up the mince, for 4 to 5 minutes until pork is lightly browned.
- Add taco seasoning and half a cup of water. Stir to combine. Reduce heat to medium. Cook, stirring, for 3 minutes until thickened and bubbling.
- Stir in corn and a quarter of a cup taco sauce. Cook for 2 minutes. Meanwhile, heat tacos and mini tortillas following packet directions.
- To serve, place warmed tacos onto a board. Fill with one or two lettuce leaves and pork mixture. Sprinkle with tomatoes. Top with a dollop of sour cream. Drizzle with remaining taco sauce.
- Wrap each taco with a warmed mini tortilla. Serve with lime wedges.
- Add sour cream and cheese between the soft and hard shells (optional).
