Ingredients (serves 10 | makes 10 )

  • 3kg peeled apricots
  • 3kg white sugar
  • 1/2 juice from 1/2 a lemon

Method

  1. wash ans sterilise jars and lids. Place apricots in a saucepan and stir through sugar.
  2. Leave for 1-2hours while sugar softens the fruit. Add juice then cook over medium heat stirring constantly until fruit is soft.
  3. remove 1/3 of fruit. set aside cook remaining mixture until fruit is mostly dissolved and jam coats the back of the spoon. Divide reserved fruit between the jars fill with jam . Allow to cool the seal lids.

  • I’ve made apricot jam for over 30 years, and use the recipe that my grandmother used for years. We’ve never peeled the apricots, and our jam has always turned out fine. I really can’t see the point of peeling the apricots, it would be a lot of work for no benefit.

  • I’m sure this is how my mum used to make jam. I’ve tried three times to grow a apricot tree, want to make my own jam from my own apricots.
