This is a great recipe for any mums that want to hide some vegetables from their children.
The chopped tomato and creamy cheese sauce makes this dish a beautiful combination.

Ingredients (serves 4)

  • 500g mince meat
  • 1 onion
  • 1/2 cup chopped egg plant
  • 1/2 cup peas
  • 125g mushrooms
  • 850g chopped tomatoes
  • 50g butter
  • 3 table spoons plain flour
  • 125g tasty cheese
  • 1 x box lasagna sheets

Method

  1. Add mince meat and onion , Cook until brown. The add chopped egg plant peas mushrooms ,( You can add any other vegetables you want.) .Then add the chopped tomatoes.Combine them all and Cook for 10 minutes.
  2. Put your mince meat as a base then add lasagna sheets. Continue this process until all the mince meat is gone.
  3. CREAMY CHEESE SAUCE. Add 50g of butter in to the sauce pan heat until melted. Then remove from heat add 3 tablespoons of plain flour. Then put back on heat and stir until combined. Then when all is combined remove from heat again and add 125g of tasty cheese. Cook until the cheese has melted and it becomes a thick sauce. Then remove and pour on top of the lasagne.
  4. Cook for 35 minutes on 200 Then serve and enjoy.

  • Even now my kids are older, I chuck grated veggies into my lasagnas because it’s just such a good way of eating extra veggies – for everyone in the family. Though I’ll admit it’s a relief not to have to hold my breath in case someone notices them and complains! Thanks for this recipe.

  • We love a good lasagne and it’s odd how, it doesn’t matter what vegetables are used like the ones I don’t like much – taste good in a lasagne. Can’t say I like egg plant but I know I wouldn’t really taste it in a lasagne. Thanks for your recipe, never used egg plant in a lasagne before so I’ll give it a go.
