This is a very easy to make cheesecake!

Ingredients (serves 8)

  • 1 1/2 cup Choc ripple biscuits, crushed
  • 4 tbsp butter, melted
  • 250 g packet Kraft Philadelphia original cream cheese block at room temperature
  • 1 pack thickened cream, chilled
  • 2 tbsp vanilla syrup
  • 1/2 cup powdered sugar
  • 1/2 can blueberries with syrup

Method

  1. Crush the biscuits and pour in pan. Add the melted butter, combine and flatten in pan. Chill in fridge for 30 minutes.
  2. For filling: In a bowl, add cream cheese, thickened cream, powdered sugar and vanilla syrup. Mix well until light and fluffy.
  3. Pour filling in cheesecake pan with Oreo base. Chill for 30 minutes.
  4. When cheesecake is set, spoon in the blueberries and syrup on top. Add fresh blueberries.

  • Oh my goodness, this dessert looks so delicious and yummy. I like that it also only has a few ingredients as well which makes it simple and easy to make. This would be ideal for my next dinner party and looks like a no fuss recipe. Something for us mums who are time poor.

  • Don’t like using tinned fruit on my cheesecakes – fresh blueberries would have been great.

  • Cheesecake is lovely ! I often make the base with nuts and dates and for the filling I leave the sugar out and omit it with a spoon of yacon syrup (which has a very low GI). I don’t have vanilla syrup but use raw vanilla powder instead and often add some more fruits.
