Who knew carrot cake is so easy to make?!


Ingredients (serves 12)

  • 2 cups grated carrots
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1.5 cup wholemeal SR flour
  • 1 tsp cinnamon
  • 1/2 cup raw sugar

Method

  1. In a large bowl, whisk eggs and oil together. Add in flour, cinnamon and sugar and continue to mix.
  2. Add in carrots and mix until all combined.
  3. Bake in a loaf pan for 45 to 60 minutes. 200C.

  • Wasn’t quite sure how to make carrot cake! Now I know! I’d perhaps get my carrot a bit smaller, so it wasn’t quite so obvious for the vegie haters!!
