Super easy and so yummy … you cant stop at one piece !
Ingredients (makes 80 )
- 8 Eggs- room temperature
- 250 Grams caster sugar
- 500 grams Almonds -Natural
- 350 Grams Plain Flour
- 1 teaspoon Vanilla Sugar
Method
- Beat egg whites until soft peaks form
- Gradually add the Sugar.... Beat until sugar has dissolved
- Add to dry ingredients
- Pour into 2 paper lined log tins
- Bake in 170 degree oven for 35-40 minutes or until lightly browned on top and skewer comes out clean
- when cool wrap in alfoil and leave over night ( i find this makes it a bit easier to cut)
- unwrap and cut in to thin slices. Place slices on to oven trays and into a 125 deg. oven to dry out for around 15-20 minutes
Notes
Note - the slices will crispen as they cool Keeps for ages in an airtight container in the pantry
