Ingredients

  • 3 pkts mashmallows
  • 5 blocks cadbury's chocolate
  • 1x 350g pkt brazil nuts
  • 5 heaped tablespoons shredded coconut
  • 2 tablespoons copha (optional - the copha only makes it easier to cut when set)

Method

  1. Boil water in a pan and place a heat proof bowl on top of the saucepan.
  2. Break chocolate into bite size pieces with copha and melt while continuously stirring.
  3. Lift bowl out and let chocolate cool a little. Stir in the marshmallows 's, brazil nuts and shredded coconut.
  4. Line a rectangle cake tin with baking paper and pour in mixture. Set in fridge overnight. Cut into squares following day.

  • This easy rocky road slice looks fantastic and so different from the version I usually make. I love the mix of marshmallows, chocolate, Brazil nuts and coconut—it looks incredibly rich and delicious. The texture alone makes me want to try it. I’d really like to make this recipe myself and see how it compares.

  • Probably substitute the brazil nuts for another kind of nut. Love the look of the finished rocky road!


    • Mixed nuts work well – good for those that like a range of nuts.
