Easy recipe
Ingredients (serves 20)
- 2 1/4 cups Plain flour
- 1 tblspn Cornflour
- 250g Butter
- 1/2 tsp Vanilla essence
- 1/3 cup Caster sugar
Method
- Sift flour and cornflour and set aside
- Beat butter with electric mixer until soft
- Add vanilla essence and sugar and continue beating until light and fluffy
- Add flour to butter mixture with metal spoon
- Press mixture into lamington tin. Mark into fingers and sprinkle with a little sugar
- Bake 150degrees for 40 minutes.
