An easy and super tasty pickles recipe for children with egg and/or dairy allergies. These pikelets taste amazing on their own and freeze well, making them the perfect lunchbox treat.


Ingredients (makes 15 )

  • 1 banana, mashed
  • 1 tbs honey
  • 185ml coconut milk
  • 1 cup self-raising flour

Method

  1. Add mashed banana, honey and coconut milk to a bowl. Mix to combine.
  2. Add flour gradually, while stirring, until mixture is the consistency of thick paint.
  3. Heat up non stick frypan over a medium heat. Add tablespoonfuls of mixture to the pan and cook until bubbles appear.
  4. Flip the pikelets over and cook until golden brown.
  5. Allow to cool and serve with honey and chopped up fruit.

  • I do love to eat pikelets particularly on the weekends. I do like to make pikelets and eat pikelets with a wealth of different fruits piled on top of the pikelets. I also like to add honey, golden syrup and other toppings to the pikelets. Starting a weekend with a pile of pikelets is perfect!

    • We have plates and other items for the house that our children made too and they are so cherished. They are also practical items and used too. It is always so nice to eat off a plate that is special and has been made with a whole lot of creativity.
