Easy zucchini slice with no eggs.


Ingredients (serves 9)

  • 4 rashers Bacon
  • 1 onion
  • 1 cup self raising flour
  • 2 zucchini
  • half cup vegetable oil
  • 1 cup rice milk

Method

  1. Prepare a baking tray with spray oil. In a bowl grate the zucchinis, add flour, bacon, and onion, mix well.
  2. Add rice milk (any milk can be used). Mix well until you get a similar consistency to a muffin batter.
  3. Pour into a baking tray. Oven temp should be 180 degrees. Approx 50 mins in oven. Until brown, not soft.

  • Complete flop. I’d start again with some scales for this one.

  • I wrote the comment about this recipe not looking right. It isn’t if you’re using standard metric measurements and my vegetables were small. It needs another half cup of flour, seasoning and a couple of Chia eggs to set like a normal slice. After 50 minutes, It was like melted cheese in the middle, and sinking – I’d already covered it with foil to stop it going too brown. A chia egg ( use white seeds for aesthetics) is 1 tbsp chia seeds in 3 tbsp water, and let it sit. Interesting experiment but disappointing and a waste of organic vegies ( the first time).   • I don’t know how this recipe can be a big success – watery vegetables, a cup of low protein milk, half a cup of oil, ( potentially fatty bacon) and only 1 cup of flour to balance this. I feel like the moon would have to be in the right place for it to set like an omelette or frittata. These were my thoughts but I’m trying it with intent to probably adjust it.

  • Unusual recipe, but great for anyone with an egg allergy. Afraid we need that protein in our household and just two rashers of bacon is plenty. Thanks for sharing.

  • Nice option if you have an egg allergy or have run out of eggs. I would prefer myself with eggs since I’m not allergic for that and it’s such a beautiful nutritious food.
    Sounds to me that it’s quite a bit of oil ? I also would add some spices, pepper, salt, nutmeg, and garlic and maybe some pesto.

  • I made this tonight but it was a flop! There was way too much liquid in it. I think pehaps the 1/2 cup of oil was the problem? Anyone else have this issue?

  • The method doesn’t mention when to add the 1/2 cup of vegetable oil. I’m guessing it is at the same time as adding the rice milk?
