This dish is an interpretation of the classic egg, tomato, bacon. In the 1930s and 40s, during the times of the Colonial rule in South Africa, this was the dish that the British travellers and officers ate before starting out for a wild safari.


Ingredients (serves 2)

  • 4 large, ripe yet firm, red tomatoes
  • to season salt
  • to season freshly ground black pepper
  • 4 eggs
  • 250gm breadcrumbs
  • 30gm finely chopped parsely
  • 8 rashers rindless bacon
  • to fry vegetable oil

Method

  1. Cut a neat slice off the top of the tomatoes and remove the pith and seeds. Season the cavities well with salt and pepper. Leave upside down to drain excess water; this allows the tomatoes to hold shape while baking.
  2. Soft-boil the eggs. The best way to ensure soft boiled eggs is to place it in cold water. Bring to boil and let boil for exactly 1 minute. Switch off heat and let stand for 2 minutes. Remove shell afterwards.
  3. Pre-heat the oven to 200°C. Place the eggs inside the tomatoes and line in a baking tray.
  4. Mix bread crumbs with parsley; season with salt and black pepper. Sprinkle this on top of each tomato and then close with the tomato ‘lids’.
  5. Bake in oven for 8 – 10 minutes.
  6. Meanwhile, fry the bacon rashers in vegetable oil.
  7. Serve the eggs in tomatoes with bacon piping hot.
  8. Eat

  • I like when things look different from your average even if it’s the same ingredients. It just makes things look more fancy and keeps the kids interested.

  • Egg and tomato is a lovely combination. The only thing is I don’t like the taste of baked tomato’s, I prefer them fresh & raw

  • We do similar, but dice the bacon and put it in the tomato shells and break a raw egg into it then bake in the oven. So simple, yet delicious. Thanks for sharing.

  • Yummy would have to make it bigger to feed the family. We cook our bacon in the oven so could all be cooked together.

  • My hub is from Northern Ireland and having lived in the Uk for quite some years, I know how much they favor their cooked breakfast. One thing I don’t like much myself is the taste of cooked tomato’s. I rather eat raw tomato’s with soft boiled egg.
