A good old fashioned meatloaf which doesn't take long to whip up.


Ingredients (serves 6)

  • 500 grams sausage mince
  • 500 grams beef mince
  • 2 onions, chopped
  • 2 packets french onion soup mix
  • 1 egg
  • squirt tomato sauce
  • herbs, salt and pepper
  • breadcrumbs

Method

  1. Mix the meats together.
  2. Add the onion and soup mix packets - mix again.
  3. Add the sauce, eggs and herbs/seasoning. Mix well.
  4. Coat in breadcrumbs.
  5. Cook at 180 degrees for around 1 hour (covered or in an oven bag).

Notes

I often divide this into two meatloafs and free one (too much for our small family). You can also divide by four for even smaller servings. I serve with lots of veggies and gravy. You can also add chilli sauce for some zing and of course some grated veggies (I don't add veggies as I serve up with so many).

  • This is a bit different to my standard meatloaf recipe – I’m intrigued by the sausage mince. I’ve not seen that in any variation before. This sounds really interesting and well worth trying as a result – it could result in a very tasty change. Thank you for the recipe, appreciated.
