Ingredients

  • 1/2 cup Paul Newman's Own Classic Vinaigrette Salad Dressing
  • 400-500g king prawn cutlets (allow 4-5 per person) deveined
  • 1 large oak leaf lettuce
  • 1 small fennel bulb, shaved or very finely sliced
  • 100g snow peas, blanched, then sliced
  • 1 avocado, sliced
  • 1 mango, sliced
  • arils of 1 small pomegranate
  • Dill sprigs, for garnish

Method

  1. In a bowl combine the dressing and prawns, toss until well to marinate. Chill for 30 minutes.
  2. Arrange in a large serving bowl the lettuce and witlof leaves, fennel, snow peas, avocado and mango.
  3. Remove the prawns from the dressing and discard. Char grill the prawns over a high heat for 5-6 minutes or until cooked through. Cool slightly then place onto the prepared salad. Drizzle with the extra dressing then decorate with the pomegranate and dill. Serve immediately.
  4. Tip! This salad can also be a delicious meat free dish to serve alongside your favourite BBQ meat.

  • Yum! Prawns and mangoes always make such a great pairing for its refreshing and fresh taste. It just screams summer whenever i see mangoes. Cant get enough of them. They’re my favourite fruit! This recipe looks delicious and one that would be great in warm weather. Love how simple it is too

  • How refreshing sounding. All family love prawns and snow peas but I am not sure the younger ones like fennel. Avocado is also loved and has many healthy atributes and i am always looking to add it with something. I personaly favour Paul Newman dressing so this is go try. Thanks for sharing.

  • What a refreshing looking summer salad. I might change a few of the ingredients around but overall it looks amazing. Love the photo, it looks great with the green bowl. I love snow peas, they always add a nice touch to a salad. Overall a great recipe thank you for adding it.

  • I absolutely love prawns and mango in a salad together. They compliment each other nicely. The only thing I wouldn’t add is the fennel. Can’t wait to try this salad with family for our summer bbqs. This one is a bit fancier than my usual prawn and mango salad I make.

  • A great flavour combinations, but I don’t eat much seafood, shellfish, etc except for prawns.. The combinations make sense though and I think it would also be nice with chargrilled chicken instead. I love mango and I love avocado but I am not sure I would put that in there too.

  • What a fabulous salad idea for the festive season! Would be perfect for a family BBQ. I love the addition of fennel, its such an underrated vegetable that drinks such a tasty and unique aniseed flavour to things especially when paired with orange, I’d be inclined to add some orange slices to this too for this reason! Yummo!

  • This recipe sounds delicious! I can’t wait to try it. Especially considering that it’s now coming in to Summer. This will be the perfect addition to our family bbq’s. Perfect for lazy days by the pool. The kids are going to love it, especially the Mango! Great idea for Christmas lunch as well.

  • This will be a salad I will be using quite often over the coming summer season. I love a salad with pomegranate in it and the addition of a mango and avocado is really a great thing to do. Whether prawns or chicken as the nutrient wouldn’t matter a bit to me.

  • I love the flavour combinations in this, but I can’t eat seafood, shellfish, etc. The combinations do make sense though and I think it would still work pretty well with some chicken instead. I love that the sweetness of the mango is offset by tart pomegranate, I love seeing the avocado in there too.

  • I absolutely love the look of this dish. It looks summery and perfect for those easy dinner nights. I love that it includes pomegranates as they are so delicious in summer and perfect in salads. it looks very healthy and full of flavour. This is a dish i would love to try.

  • It looks great and I love fruit in salad, especially mango. Actually I like to eat salad every day. I do not eat fish or meat, so no prawns for me and I am not a fan of dressings either. Fennel again is a lovely addition to salad and is light on the stomach and easy to digest
