A lovelly light and sweet treat.
Ingredients (serves 12)
- 1 cup self raising flour
- 1/8 tsp salt
- 1/2 cup castor sugar
- 1/4 cup butter, softened
- 1/4 cup clear honey
- 2 Eggs
- 1tsp vanilla extract
- 1/2 tsp finely grated orange zest
- 1/2 cup finely chopped dried figs
- 1/4 cup finely chopped walnuts
- HONEY FROSTING
- 1/3 cup butter, softened
- 2tsp clear honey
- 1/2 tsp clear honey
- 1cup icing sugar
- 6 fresh figs quartered
Method
- Beat the butter, honey, eggs, vanilla, and orange zest until just blended. Add flour, salt and the sugar followed by figs and walnuts.Spoon into prepared cups and bake for 25 - 30 minutes or until firm to touch. Allow to cool completely.
- Honey Frosting: Beat the butter, honey and vanilla, stir in the icing sugar until well blended. Spread the frosting on top of cupcakes. Decorate each cupcake with 2fig quarters and a drizzle lf honey.
