A lovelly light and sweet treat.


Ingredients (serves 12)

  • 1 cup self raising flour
  • 1/8 tsp salt
  • 1/2 cup castor sugar
  • 1/4 cup butter, softened
  • 1/4 cup clear honey
  • 2 Eggs
  • 1tsp vanilla extract
  • 1/2 tsp finely grated orange zest
  • 1/2 cup finely chopped dried figs
  • 1/4 cup finely chopped walnuts
  • HONEY FROSTING
  • 1/3 cup butter, softened
  • 2tsp clear honey
  • 1/2 tsp clear honey
  • 1cup icing sugar
  • 6 fresh figs quartered

Method

  1. Beat the butter, honey, eggs, vanilla, and orange zest until just blended. Add flour, salt and the sugar followed by figs and walnuts.Spoon into prepared cups and bake for 25 - 30 minutes or until firm to touch. Allow to cool completely.
  2. Honey Frosting: Beat the butter, honey and vanilla, stir in the icing sugar until well blended. Spread the frosting on top of cupcakes. Decorate each cupcake with 2fig quarters and a drizzle lf honey.
