This is a family favorite especially in the rainy days! Comfort food is too great!


Ingredients (serves 5)

  • 1/4 cup FLour
  • 2 large eggs
  • 1/2 cup parmesan cheese (shredded)
  • 1 cup dried bread crumbs
  • 1kg chicken tenders
  • 1tbsp Italian herbs mix
  • 1 tsp garlic powder
  • 1/4 tsp salt

Method

  1. Place flour in a shallow dish. Lightly beat eggs in another shallow dish. Combine Parmesan and breadcrumbs in a third shallow dish.
  2. Coat chickenwith Italian seasoning, garlic powder, and salt in a medium bowl. Coat each piece in flour, shaking off any excess. Dip in egg and let any excess drip off. Then roll in the breadcrumb mixture.
  3. Fry in very hot cooking oil until they become golden brown. Should take about 10 minutes.

Notes

Best serve with sweet chili sauce!

  • Oh how nice would these be, especially with the addition of parmesan to the crumbs mixture. So much tastier, healthier and cheaper than buying KFC too. I’d love to try them with a little chilli powder added to the spices.
