A deliciously fresh scrumptious salad with a divine creamy aromatic dressing for the crowning glory.


Ingredients (serves 4)

  • 1 small bag green leafy mix
  • 1 small honey dew melon, peeled and flesh cubed
  • 1 Corella pear, sliced thinly
  • 1 Granny Smith, sliced thinly
  • 1 cucumber, sliced thinly
  • 1 cup green grapes
  • 1/2 cup slivered almonds
  • FOR THE DRESSING:
  • Mix together:
  • 1 cup yoghourt with coconut
  • 1 tsp Angostura aromatic bitters
  • 2 tbsp mustard
  • 2 tsp honey
  • salt and pepper to taste

Method

  1. Arrange the leaves on a serving dish/plate and layer next five ingredients on top of the green leaves.
  2. Sprinkle with almonds.
  3. Pour dressing over salad just before serving.
  4. Do hope you enjoy.

Notes

Tip: Watercress is also delicious substituted for the green leaves also walnut in place of the almonds ...but hey why not go all out and use them both. Extra Tip though that is very important...if children are to consume this salad please cut the grapes into halves and maybe discard the nuts for them. :-)

  • I love bitters and this recipe is so interesting and unique and I love the sound of it and the look of it too. Love all of those greens and love the presentation. I would happily munch on this salad. :)
