Ingredients (makes 4 servings)

  • 4 chicken breasts
  • 1 tbls basil
  • 1 tbls parsley
  • salt and pepper
  • 4 sliced garlic cloves
  • 1/2 tsp crushed red pepper flakes
  • 2 tomatoes

Method

  1. Pre heat oven to 180 degrees. Coat baking dish with cooking spray.
  2. Sprinkle all ingredients except tomatoes over chicken on both sides.
  3. Cook for 25 mins then place the sliced tomatoes over the chicken and bake for another 15 minutes until cooked through.

  • This is very simple but seems likely to taste very good.

  • What could I use instead of basil in this recipe, as I don’t like the flavour of basil?


    • I would use sage instead of the Basil, or chives, or even both with the parsley – or you could just sprinkle some mixed herbs over too if you don’t have the fresh ones. Good luck!
