Yummy lemon and blueberry cake.


Ingredients (serves 8 | makes 8 )

  • 125g margarine
  • 1/2 cup sugar
  • 1 egg
  • 2 cups SR flour
  • 1 cup yoghourt
  • 1 jar lemon curd
  • 1 punnet blueberries

Method

  1. Mix margarine and sugar till sugar incorporated, add egg, and flour and yoghourt alternately.
  2. Pour mixture in loaf tin, cook 160 degrees C for 1 hour.
  3. When cake cooked poke holes in it with a chop stick and fill the holes with lemon curd, top each hole with a blueberry, Spread more lemon curd over cake and top with remaining blueberries.

  • i haven’t made a cake that uses yoghurt as an ingredient in it before so this would be a new experience for me. I reckon that this sounds lovely plus it looks fun which the kids will like. Cheers for sharing your recipe idea
