Ingredients (makes 1 nearly a cup)
- 400g can diced tomatoes
- 1 tbs olive oil
- 1 tbs balsamic vinegar
- 1 garlic clove, crushed
- 1 teas dried Italian herbs
Method
- Place tomato, oil, vinegar, garlic and herbs in a saucepan over medium-high heat. Season with salt and pepper. Stir to combine. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 20 to 25 minutes or until thickened. Cool completely.
