Ingredients (serves 2)

  • 1 can Coconut milk
  • Oh yea! That's it!

Method

  1. Leave coconut milk upside down in the fridge overnight.
  2. Next day, open the can upright and pour the water part on top. Do not discard. Use it for other purposes like soaking oats, or making pancakes.
  3. The bottom part will be the creamy part. Put them in a bowl and whisk for 2 minutes. Serve with your favorite cake!

  • Wow! That’s awesome super simple recipe. I have never actually used coconut milk as whipped cream before but i do love coconuts so I’m definitely going to try this. My daughters birthday is coming up so that might be the perfect opportunity to give it a go. Thanks for sharing. 🙂

  • I absolutely love the flavour of coconut, and this sounds so simple and yet so tasty. Would be brilliant on a pavlova. So many uses, and all just a little bit naughty.
